We grow many varieties of microgreens and make all sorts of different mixes, and each one has its own personality. One way to get to know them is on toast: good bread, something creamy underneath and a big pile of greens on top. Breakfast, lunch or a snack in five minutes.

Storage: Keep them in their containers in the fridge, unwashed. Rinse gently just before eating if you would like. They’re best within 7-10 days.

Know this week’s microgreens

  • Celery: tastes like strong celery, only brighter and more fun. A little goes a long way, so use it like a fresh herb on eggs, soups, potato salad or anything that would welcome a hint of celery.
  • Arugula: peppery and nutty, like full-size arugula but more tender. Great anywhere you’d use spicy greens, full size arugula or black pepper.
  • Fresh Mix: one of our house blends of sunflower shoots, pea shoots, broccoli, red cabbage, arugula, pink and purple radish, and green and red sorrel. It’s crunchy, sweet, mildly peppery and a little lemony from the sorrel, all in one bite. Use it on everything.

Start each one with a slice of good bread, toasted, and finish with a pinch of salt and a drizzle of olive oil.

1. Egg and celery toast

  • 1 egg, fried or scrambled
  • A nice pinch or pile of celery microgreens
  • Black pepper

Top the toast with the egg, then the celery microgreens and pepper. The celery flavor is delightful and it is lofty on the plate.

2. Arugula and ricotta toast

  • 2 tablespoons ricotta or soft goat cheese
  • A drizzle of honey
  • A handful of arugula microgreens

Spread the cheese on the toast, drizzle with honey and pile on the arugula. The sweet honey and peppery greens balance each other.

3. Avocado and Fresh Mix toast

  • 1/2 avocado
  • A squeeze of lemon
  • A big handful of Fresh Mix
  • Optional: chili flakes

Mash the avocado on the toast with the lemon and a pinch of salt. Top with as much Fresh Mix as will stay on.

More ways to use them: Stir celery microgreens into potato or egg salad. Scatter arugula microgreens over the roasted potatoes or a pizza when it comes out of the oven. Toss the Fresh Mix into any salad with the house vinaigrette.
